cooking school — week 1

Just thought I’d take some pictures each day and show you what we’ve been up to! No recipes to post, but if you want to ask any questions, lemme know — these tasks and meals are all about technique! Obviously we had a lot of fun with chicken. I can now break down a chicken (never hitting the bone, ahem) like nobody’s business. Whatever that means.

Pics! 

Roasted chicken stock. Naturally, my first thought was, “why not just buy this shit?”. I learned my lesson after tasting. WORTH IT TO MAKE AND FREEZE.

Butter massage.

She’s clearly playing hard-to-get.

One of the things I wanted to learn, firsthand, was how to make chicken breast as delicious as I know thighs and drums can be. Chicken breast, in my mind, sucks. But now I know. THE PAN-SEARED CHICKEN BUTTER SPLASH. I will post it soon, I promise.

The left, a simple roasted chicken. The slut on the right? Roasted chicken with pastrami butter. Yes. Flavored butters, also known as compound butters. Also known as my NEW FAVORITE THING.

Tuna Nicoise. Tuna “As prepared in Nice”. France. Whatever. It’s healthy and John’s favorite salad and probably my least favorite salad but I am still proud.

    Love the pictures! I just started a roast chicken “project” too – made my first about a month ago. Been perfecting recipes; I’m trying a beer can roast chicken tonight. Keep posting cooking school updates!

    I LOVE that you’re back to posting! First off, congrats on your first USO tour! Secondly, need to know which school you decided on. And honestly, is it as much fun as you make it seem??
    PS: I know you are working those pork rinds into the fried chicken, and I love you for it. I’ve done the same with Corn Flakes cereal, and it is the tits. Good tits. Not sloppy…ne’er mind. you get the point.

    Everything looks amazing. Compound butters?? I need to try. I always thinks chicken breasts are boring, too, unless you know, they’re wrapped in bacon and stuffed with boursin. Please share your newfound deliciousness! Excited to hear about your cooking school adventures!

    Ms. Teigen!!! Love the first pic, at the very top, and I think it should go viral. Yes, we can all redefine beauty, AND fashion, with that pic. Plus, chickens may, finally, get the recognition they deserve.

    Maybe I am being spoiled by asking this, but, Could you post little cooking secrets as you learn them. I am speculating you are beginning quite an adveture, that I may not be able to afford for a while..

    That soup looked really good. Can you attend a high end cooking school if you cannot cut a radish into a rose? Seems so much emphasis is on presentation rather than taste. Can a “non-artiste” learn how to do that stuff? Thanks for the post also :)

    Yay, you’re back! Love, love, love roasted chicken, and somehow I can always convince myself it’s healthy regardless of the amount of butter/fat/oil I use because it’s “roasted”… Anyway, could you please clarify for me if you have to throw away the chicken used to make chicken stock or do you just use bones? Thank you!

      Roast a pan full of chicken wings until they’re nicely brown – not golden, actually brown. Put in stockpot with onion, celery, carrot, garlic, herbs, cover with water, boil for a few hours. So simple.

    I made BACON compound butter for our turkey last year. Try that on a roasted chicken.

    Can’t wait for you to post this recipe: PAN-SEARED CHICKEN BUTTER SPLASH. I find a way to f chicken breast up every time, usually by overcooking it!

    Once you finish cooking school, I think you should pursue some sort of collaboration with the one and only Ree Drummond. Think of the deliciousness and hilarity that would ensue! I say that selfishly because I think you’re both great. It’s awesome to see how you’re pursuing your passion. Get it, girl.
