Texas Country Potato Salad

Texas Country Potato Salad sounds weird together. Am I wrong here? I don’t like saying Texas Country. You are Texas State, don’t try to get out of being associated with us! Or is it “Texas *PAUSE* Country Potato Salad? Anyhow. Do I love the name? No. Do I LOVE THIS POTATO SALAD??? YES. DO I WANT TO MAKE THIS FOR EVERY SUMMERTIME BBQ I HAVE IN THE NEXT FEW MONTHS?? YES. AM I OVERLY EXCITED ABOUT THIS? NO BITCH! IT IS THAT GOOD!

What’s that? You wanted me to get more specific? Well okay bossy pants. See this photo? Those are little red potatoes. And those little red potatoes are swimming in a jacuzzi of seasoned water and BACON GREASE. You boil. These potatoes. In bacon grease.

I rest my case.

I LOVE potato salad. Although I must say, it’s kind of a forgotten food for me. I never think about it. I never say to myself, “Man, this dinner is good but it would be complete with…..potato salad.”

But I think I’m gonna start saying that now. My old thoughts of potato salad were that of the ones from fast food places. Perfectly diced potatoes. Plain, slightly watery sauce. This is ohhhh so different. Rustic. Rugged. Flavor country.

Bacon, eggs, red potatoes, green onion, mayo…….wait a minute. Yes okay it’s basically those deviled eggs having sex times with potatoes but hey, that’s a porn I would watch (celebrity sex tapes are always such snoozers) (yes I’ve watched and I know you do too) (leaked pictures too) (blake lively is really pretty) (okay this is getting creepy)

Smooth and creamy with pops of bacon and green onion. Just to die for. My low-carb diet arch nemesis, ladies and gentleman I present to you…

    that is basically the same recipe I always make except i use russets. I staqrted adding bacon to it last summer when i was on a serious bacon binge, I also add a little celery for the crunch. Oh, and I always triple that recipe so we can eat it for a few days.

    Girl where have you been? This is how my fam has made it for years. this is the only way i know potato salad!!! yum yum and yum. the only thing i add is a little relish but to each is own, good timing being memorial weekend next week and all :)

After all you’ve put up with in the last day, I felt like you needed to be reminded of all the nameless people who you inspire to cook braver, act better and think smarter.     I’ve been reading the blog for a whiiiiillleee now, and of course always love it. Tried tons of your recipes, and learned from you about Pioneer Woman who I am now also obsessed with! Anyway, I saw all the twitter cray crays and just wanted to come here to make sure you know that WE LOVE YOU! The internet is full of psychos. Mostly psychos who have zero self esteem and need to hide behind a computer screen, tearing someone else down in order to feel good about themselves. Its actually pretty sad…if they weren’t such hatemongering douchenozzles. But you have a little community here of ladies (and I’m sure some dudes!) who think you’re just fantastic! Keep being funny, keep being outspoken, keep being smart and strong…keep being so totally down to earth that we all (I KNOW I’m not just speaking for myself here) consider you like an actual friend, if only in our heads via your blog.     I’ve never heard of boiling the potatoes in bacon grease, but how could that taste anything but amaze balls? I hate a red potato, but I would go down on that salad if it were made with baby yukon golds. In fact, the only way I’ll eat potato salad is if it involves sexy times with eggs, bacon, mayonnaise, green onion, and a little celery and mustard. My mother-in-law has been making it that way for years. It’s one of the few things she makes that I like enough to make myself. But better. Duh.

Most people in the modeling business give off the vibe that they never eat, which I don’t understand because I too share this insatiable desire for good food!     Thank you SO much for posting this recipe. You are not overexaggerating its amazingness! I freaking HATE potato salad with my whole being. Husband loves it. So when he requested potato salad as a side for our Memorial weekend BBQ, I not only cringed, but also threw up in my mouth a little. Luckily, you saved the day, as you have for me many nights with your great finds. I made this on Monday, and it was gone in minutes! And that’s because I kept snacking on it in the kitchen and it almost didn’t make it to the community table. I’ve already made it again, and I’m not tired of it yet. Thanks!!!!!
