Ew I HATE being “this girl”, but hey, we all gotta buckle down sometimes for whatever reason.
Shape magazine asked me to make a list of my favorite low-carb meals, since I am a firm believer in NOT calorie counting — for my body type at least. Listen, I’ve tried EVERYTHING in the quick-weight-loss book. And trust me, I know it’s literally just a quick fix — but sometimes, that is all I need. I need to drop a few pounds quickly, then go back to normal life. Is it the most healthy thing to do? Probably not. I’m not a doctor but I still know that a consistent, healthy lifestyle is probably best. But is it realistic? No. We can’t be perfect all the time, I’d go bonkers.

i love the ham cups (although i like to call them “meat muffins”), so i wanted to make your stuffed peppers…but i didn’t read the recipe BEFORE i went grocery shopping, so i just made them with what i had. filled my peppers with lemon-pepper chicken i had baked up (extra from dinner, holler for multi-tasking!) and sausage bits (left over from making meat muffins for the week!), cheeeeese and some little pieces of zucchini.
mmmmmmmm…they turned out really good!
keep updating your blog with low-carb recipes, it’s super helpful and yours are more fun to read than others.

I agree that this is so helpful and refreshing that you are honest about the hard work you put in to look great. I know this is a food blog, but it would be really helpful to hear about your workout routine (if you have one). Obviously diet is the more important part of looking great, but if you have a fitness routine that works I would love to hear it!
Found a breakfast idea that you might want to add to the ham egg cups. Cook an egg in an avocado, (for the gal who loves avocado!)
